Here is the recipe I used for the last of the squash on Friday. It was delicious, and I still have some left over. However, I don't think I'm going to be able to stick with local food for all of this week. I went to the farmer's market on Saturday, but I don't think I bought enough to last for a week. Tonight, though, I'm going to try roasted beets, which sounds exciting, and I'll probably make the mashed rutabagas again later in the week. And there's still some miso soup left over, but I have a feeling that wouldn't go very well with beets. So tonight we'll have a salad (I still have plenty of greens) and some of the leftover squash.
But first I have to get some rosemary from my garden...
